SwagFit Challenge Day 26: Find New Veggies!

Not the best day but we are kind of taking it easy.  Ate OK but not the greatest….LOL.

Challenge:  Find new veggies to incorporate that you wouldn’t normally eat!  I haven’t eaten eggplant in a long time so I plan to find some new recipes to use eggplant in this week!  If you feel like it try and find a new one (or one you haven’ t had in a while) and find some new ways to use it!

    Planned on a walk but ended up jogging so of course I had to have a donut to reward myself. Why do grocery stores have bakeries????? I ate well other than the donut so not too bad.

    Today was a great day. I got up early and did my Pilates and walked 36 flights of stairs for my cardio. I ate a bunch of fruit and had only water and a cup of grapefruit juice. Now the only thing that I have to do is a little stretching and that’s it. Now I hope that I can keep this up tomorrow.

    ate ok. did some yard work but no other exercise, My sister in law gave me some radishes and turnips today. never had either before so we’ll see how they go over this week

    I had some left over watermelon for a late snack. I had lots of water and no pop or sweet drinks today. I ate well and healthy. I walked and I also did my routine on the balance ball for my exercise. I did 50 situps.

    I did good today. I want to eat more sweet potato!

      Oh I LOVE sweet potato. I have one every night. I know there are many things to do with it (sweet potato fries, etc) but I just eat it plain.

    I did ok eating. And I did some walking in the yucky heat which made me sweat even more XP And I did my post vacation shopping today and picked up fresh blueberries, rasberries, peaches, and plums… yum yum!

    Today was a good day overall. DH and I ran with the kiddos in the mugging stroller for ~40 minutes. Then, off to a graduation party where ate really well and eve had a piece of cake! I know I can be a picky eater but love tomatoes, carrots, salads . . . Not too adventurous with food, so maybe I’ll try sweet potatoes again!

    Not the best day but I knew it wouldn’t be as we went to a wedding. I did dance some so hopefully burned a few calories. I am ready to get back to the gym Monday though!

    I went shopping for like 4 hours so I was exausted, but I ate really good today. Swam in the pool. I didn’t eat any new vegs but my refrigerator is literally filled with fresh vegs right now.

    I didn’t do bad for going to a grad party. They had a taco bar. Had summer squash recently, prepared it way different than the way my parents’ cooked it (they fried it). It was really good. Planning to add some avocados in a salad new week when my friend comes over.

    I belong to an organic buying club. every week i get a different box of organic vegetables, so i never know what i am going to get . i only know that it will be seasonal. i always receive something that i probably wouldn’t normally choose. this week i received spinach, mustard greens, artichokes, mini-peppers, avocadoes, tomatoes ,lettuce , mushrooms, and broccolini.

    I’m still sick! So Drank lots of water today, and had chicken noodle soup, and I’m resting it up! Hopefully will feel better tomorrow.

    Not exactly new, but last summer I discovered cabbage, cauliflower and hard squashes. I never thought I would love cabbage but I absolutely do. I steam it and it gets mushy and sweet, that’s how I like cauliflower too. I found this recipe for cauliflower pizza crust that I may try. My extremely picky son just started eating cauliflower and told me it tastes like french fries. They do use it alot to make “faux mashed potatoes”. The pizza crust may go over pretty good.

    I have been getting hard squash at the farm mkt for .50/lb and just love it! My favorite is Acorn and Butternut. I especially like them roasted in the oven. I don’t put anything on them on at when they cook they naturally release the sweetness. I also like the spaghetti squash. I just mix it all up together.

    Unfortunately I have to avoid alot of fruits and vegetables due to digestive issues. It’s a bummer because I LOVE them.

    Wow, talk about new veggies! We recently turned our eating habits upside down by going organic (and not going broke!). Some of the veggies new to us have been bok choy, noodle beans, chinese cabbage, kohlrabi, and parsnips to name a few. Not mention a regular addition of rabbit meat!     there are so many heirloom squash available now: not just zuchinni and yellow squash. Cymlin is my favorite: I cube it, marinate in vinigerette and grill.
