Before you dive into the recipes, keep these quick sanity-saving tips in mind to get the absolute most out of your machine:
1. The Liquid Gold Rule
An Instant Pot physically cannot build up the pressure needed to cook your food without thin liquid. Always ensure you add at least one full cup of liquid (water, chicken broth, or vegetable stock) to the bottom of the inner pot. Thicker sauces, like barbecue sauce or heavy cream, should be layered right on top of your ingredients and never stirred into the bottom, or you’ll trigger the dreaded “Burn” notice!
2. Trust the Natural Release for Meats
If you are cooking heavy meats like pot roast, pork shoulders, or chicken breasts, avoid flipping the quick-release valve immediately when the timer beeps. Forcing a quick release pulls the moisture straight out of the meat fibers, leaving you with dry, tough results. Let the pot sit undisturbed for 10 to 15 minutes to allow the pressure to drop naturally—this locks the juices into your meat for melt-in-your-mouth tenderness.
3. Keep a Spare Sealing Ring on Hand
The silicone ring inside your lid absorbs food odors like a sponge. If you cook a highly seasoned batch of savory dinners, that scent will linger in the silicone ring and can actually transfer over to your next batch of sweet oatmeal or dessert! Keep one dedicated ring for your savory dinners and a separate ring for neutral or sweet dishes.
4. Sauté First for Maximum Flavor
Don’t skip the “Sauté” button! Taking five minutes to brown your onions, garlic, or the outside of your meat right in the inner pot before locking the lid creates incredible caramelized flavor depth that you just can’t get from standard pressure cooking alone.
5. Don’t Forget the Deglaze
After using the sauté function, always pour in a splash of broth or water and use a wooden spoon to scrape up every single bit of browned food stuck to the bottom of the stainless steel liner. Leaving stuck-on bits on the bottom will interfere with the heat sensors and trigger a burn warning once the pot tries to pressurize.
